WThis is a simplified version of a beverage featured on our latest menu. This is a large-volume pre-mixed that's bursting full of flavours associated with festive period, rendering it ideal for hosting a holiday party. Any leftover syrup you can use for morning drinks, desserts, or for another batch of bikinis.
Bikini Recipe
Makes enough for 10 people
Ingredients for the Clementine Cordial (yields 750ml)
300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g fine sugar
For the Cocktail (produces 850ml, serving 10)
400ml good quality vodka
100ml classic gin
150ml peach-flavored liqueur
200ml citrus syrup (as made above)
Fresh cranberries, to garnish
Mandarin essential oil, to finish
Method
For the Citrus Syrup: Place the listed items in a pot, heat until it reaches a simmer, stirring until the sugar dissolves. Next, remove from the heat allowing it to cool down completely. Pour into an clean bottle, close it and store chilled, it will last for around a month.
Preparing the Premix: Pour the specified liquids in a large bottle, let it rest for 60 minutes, then filter it , ideally through a fine cloth, making it perfectly clear.
When ready to serve: Measure 85ml of the cocktail base to a stirring glass packed with ice, and stir gently for a minute to chill. Filter to a cold coupe glass or similar, garnish with a few cranberries and complete it using a light spray of the essential oil over the drink.
